Green Beans with Ginger, Scallions & Cilantro

serves 4

ingredients:

  • 4-6 cups trimmed organic green beans

  • 3 tablespoons grassfed butter

  • 1 tablespoon grated peeled fresh ginger

  • 1 grated garlic clove

  • 1/2 cup water

  • 2 scallions (green onions), chopped

  • handful of fresh cilantro, chopped

directions:

  • melt the butter (3 tablespoons) in a small pot over medium heat. add the fresh ginger and garlic. cook for 1 minute and set aside.

  • put the green beans in a skillet with 1/2 cup water and 1 tablespoon of butter. boil over medium-high heat until the water evaporates, approximately 8 minutes. Sauté the beans in the skillet for about 2 minutes.

  • add the chopped scallions to the skillet as well as the ginger, garlic butter. add in a handful of chopped cilantro leaves and toss together.

  • add freshly ground pepper and sea salt!
