ingredients:

  • 4 lbs organic yukon gold potatoes

  • 1 cup (16 tbps/2 sticks) grassfed butter

  • 1 1/2 tsp sea salt (or more if you like! taste as you go!)

  • 1/2 cup raw milk (you can use vat pasteurized if raw is unavailable)

  • 1 cup organic heavy cream

  • minced chives for garnish

Why Raw Milk?

Raw milk is a superfood! While it has a superior nutritional profile compared to pasteurized milk, it also has a rich, creamy flavor. Since it's not heated to high temperatures, raw milk retains beneficial enzymes, probiotics, and fat-soluble vitamins that are lost during pasteurization. Keeping milk raw enhances digestion and thus bioavailability of its nutrients. A gut healing favorite!

Vat Pasteurized vs. Ultra Pasteurized Dairy

Something to note is the difference between vat pasteurized and ultra pasteurized dairy. Getting raw milk or a variety of raw dairy is not always easy nor possible. Vat pasteurization typically involves heating the product to a temperature between 140-185°F for longer periods of time while ultra pasteurization occurs for shorter periods at 275-302°F. Vat pasteurization is preferred as the pasteurization process aims to preserve the nutritional profile and flavor of the milk.

directions:

  • begin with peeling your potatoes! when soft, throw in a kitchen aid standing mixer bowl with the whisk attachment for the fluffiest mashed potatoes. if you do not have a standing mixer, no worries! a hand mixer works well too.

  • whole the potatoes are hot in the bowl, add the reminding ingredients. mix for approxiately 5 minutes or until the potatoes are silky and fluffy!
